Hello! I’m so glad you’re here and you should be so proud in taking the first steps towards changing your health. I hope you hear some of your story in my story and know that there is always hope. A health transformation is possible for everyone, including you!
As a young woman in my twenties, I struggled with chronic back pain, bladder spasms, fatigue and burn out, chronic sinus infections and intense allergies. I was diagnosed at 27 with Non-Alcoholic Fatty Liver Disease. I was constantly stressed and running on adrenaline. I was so tired and the only thing that kept me going was the passion for my job and my family and friends. I struggled with negative self-talk as I continued to try diet after diet, shakes and plans, all to lose the same 8-10 pounds and then regain. It seemed that no matter how hard I tried, nothing worked. I felt destined to be overweight and that I would never feel “well”.
Ultimately, I had given up. I had come to terms that I would always be overweight and I should just enjoy the other aspects of my life and ignore my declining health. I resented any conversation my family would try to have with me about my weight or health and would shun anything they offered as a solution.
I felt so defeated. Success stories frustrated me because I saw no results like the ones depicted in magazines or online in the information I read. I wanted to change, but I also didn’t want to change. Food was my way to cope with the stress of my job and my inability to lose weight and find health.
I moved from a Standard American Diet to a Ketogenic lifestyle in 2016. I was listening to a Beachbody podcast (yes, I was trying just “one more time” and using shakes and at home work-outs) and heard about the Ketogenic diet. I then started researching to discover the science behind the lifestyle and learn more about how our bodies work. I realized there was a whole realm of knowledge I knew nothing about. Not only did I lose weight (50 pounds lost and maintained for 6.5 years!) and reverse my NAFLD and other chronic health issues, but I gained so much knowledge and a new found passion for health and wellness!
Throughout this journey, I have realized that I can have it all and don’t have to sacrifice my health for my job or my family. Putting yourself and your health first allows everything else to fall into place. It’s never too late to decide to make a change. I wish that I would have known then what I know now, but I’m enjoying a new life thanks to the lifestyle changes I have made.
As much as I love nutrition, I know that there are so many other components that are so important, like sleep, stress management, and movement. I work to educate and empower my clients to create a sustainable, well-rounded, and fulfilling lifestyle that addresses all the components of optimal health.
Lindy Bulsterbaum
Hi there! My name is Lindy. I’m the wife of an SAFD fireman, the mom of two beautiful & talented children: Britney (21) and Logan (13). I teach 5th grade in NISD, and I’m from a very big family: I’m the oldest of 7 children.
I’ve almost always been overweight: except for birth (I was a sickly baby) and after some extreme dieting in my 20s. I have always cared about my health, but I always felt that I hadn’t quite managed to crack the code of health and wellness. I gained weight very easily, and my health was always a struggle to maintain. I had irregular periods, allergies, chronic fatigue, I was pre-diabetic, and massively inflamed.
In 2008, I was pregnant with my son, lost my mother to a long battle with cancer, and began my career as a teacher. Teaching is my passion, but the first years of teaching can be brutal. All this stress led me to be over 260 lbs and tired all of the time; I felt miserable and just wanted to hide away. I leaned on my husband so very much, and my kids were not getting the mother they deserved.
Then tragedy struck our SAFD community and our city in May 2017. When a fellow fire fighter died tragically in a fire, we were all in shock and in deep mourning for this brave man who left behind a beautiful pregnant wife and a daughter and a son. As my heart broke for my fellow fire-wife, I was faced with the true reality behind my own situation: if it was me who lost her husband, I couldn’t physically be the mom I needed to be to get us through. I also felt pulled to ‘Do It for the Deems’… to live my life to the absolute fullest because you never know which day is your last. I began researching and researching and researching…. and one July morning in 2017 I told my hubby my plan, and I jumped into Keto!
The only time I look back is to see how far I’ve come! I have lost over 100 lbs and maintained that loss (while adding a substantial amount of lean body mass through resistance training) My motto is: Take it one choice at a time! I also love self-experimentation. Early on in my journey, I found all of the differing opinions on keto methodology very frustrating. But I have found that it’s because everyone is so very different! You have to listen to everyone’s input and find what works best for you! Helping others crack the code or navigate their way to finding their optimal health is now a passion of mine. I look forward to working with you!
Terri Barrios
I’m Terri, a 49 year old wife and mother of two. Like a most women, I’ve spent over half my life being on a diet or thinking about being on a diet. My life revolved around nutrition since before I was a teen, so I decided to study it in college. I became a Registered Dietetic Technician and counseled Women and Children on healthy eating for 15 years.
When I hit my 40’s I found myself gaining weight rapidly and in constant pain and looking for answers. I was diagnosed with: multiple sclerosis, occular migranes, PMDD, PCOS, metabolic syndrome, insulin resistance, joint pain and rheumatoid arthritis, non alcoholic fatty liver disease, depression and anxiety, severe allergy issues, high cholesterol, fibromyalgia, acid reflux with GERD, and finally Hashimoto’s Thyroiditis and thyroid disease.
I was given meds for almost every one of these issues and then more meds to take care of the problems those new meds caused. Because of my background in nutrition, I decided to research how to fix myself and I reluctantly started a ketogenic diet in July of 2016. I instantly lost 30 pounds, my brain fog lifted, my joint pain disappeared and my bloodwork came back normal. I surprised myself and my doctors!
I am now going on my 5th year of keto and I’ve recently hit menopause. I’ve had to reevaluate what works and how my hormones factor into it all, so I try not to focus on the weight loss and simply focus on staying healthy. I’ve realized that weight gain can possibly be muscle mass or increased bone density and as long as I’m feeling good, that’s what’s important.
In the last 4 years, I’ve managed to convert my immediate family as well as extended family and friends. My husband is a registered nurse and has healed rosacea, fatigue, borderline diabetes, high cholesterol, GERD, arthritis, sleep apnea and the “dad slump” that had him wanting to nap after every meal. My 22 year old son was diagnosed at 18 with non alcoholic fatty liver disease and ITP (a platelet disorder) along with a few other autoimmune issues and has been able to use the ketogenic diet to heal. This is nothing short of a miracle since he was a typical teenaged “gamer” and survived on ramen noodles and Dominos pizza bowls. My 19 year old daughter switched to keto at 16 and has used it to heal sports related stress fractures, acne, GERD and joint pain. I also believe she was showing signs of PCOS and autoimmune issues that have disappeared since keto. As a family, the four of us have lost over 200 pounds!
My hope is that I have not only given my husband and children a key to better health so they don’t have to face the same health challenges I have faced, but that I can also help you and your family heal.
